Unfortunately I have not launched any of my products with ClickBank. I use a separate Affiliate Marketplace called PayDotCom. With this market place you can actually choose not to show the product in the marketplace, and at a later stage (when your launch is over) you can choose to add your product and designate the product to a specific category.

Clickbank may have similar features. Have you contacted ClickBank - they would be able to provide you with the best answer?
